Bake some ANZAC Biscuits this ANZAC Day and give them to a veteran you care about.... or perhaps one who needs to know that someone cares.....


With ANZAC Day coming up it seems only appropriate that we share the ANZAC Biscuit Recipe. Make some for your loved ones or for someone who needs to feel loved this ANZAC Day.

This is my recipe, it is a little different than some recipes but hey, it works for me and makes about 70-75 biscuits.  I never get any complaints.

ANZAC Biscuits

Combine 2 ¼  cups plain flour, 2 cups rolled oats, 2 cups sugar with 1 ½ desiccated coconut in a large bowl.

Melt 250 butter with 4 tabsp golden syrup.  Mix 1 teasp bicarb soda with 2 tabsp boiling water.  

Combine butter and bicarb soda mix OVER the bowl of dry ingredients.   Be careful as the bicarb can make the mix bubble up A LOT.  Then add in one beaten egg.

Roll walnut sized balls and place on trays allowing room for spreading.  Bake 180 C (160C fan forced) for about 13-15 minutes.  They should be lovely and golden when cooked but don't let them burn. Cool on trays.
